Copper also acts as a catalyst in the formation of hemoglobin, the oxygen-carrying blood component, and a condition similar to iron deficiency anemia has been produced experimentally with a copper-deficient diet. Copper is known to be associated with intestinal enzyme activity and is carried to body tissues in blood plasma. The highest concentrations in body tissue are found in the liver and in certain areas of the central nervous system, particularly the brain. Sources of supply for human diet are animal flesh (especially liver), oysters, fish, whole grains, nuts, and legumes.
